Cinnamon Pancakes

Hi guys. Hope you all had a great week? I certainly had a great week. It was my birthday this week and I promised to treat myself to a special meal. One that I hadn’t cooked before. I was so exited all week, I couldn’t stop talking about it. I had my boss lady friends Dfab ( CEO of Lish and Lou) and Yems ( CEO of House of Arike) with me, so it made the cooking all the more exciting.

My first treat of the day was Cinnamon pancakes. I have always loved pancakes. No doubt about it. Hence my excitement that morning. Ok, let’s get started on the ingredients and cooking process.

1 cup of Flour
1 tablespoon of Sugar
1 teaspoon of Baking powder
1/2 a teaspoon Salt
1 cup of Milk
2 tablespoon of Butter( to be melted)

For the cinnamon spread
I tablespoon of Ground Cinnamon
2 table spoon of Brown sugar
3 tablespoon of butter
I tablespoon of flour

The above will serve 2 people

Prep time :5 minutes
Cooking time 20 minutes

Utensils: skillet or large frying pan
Wooden spoon

Pour in the flour into the bowl, add the baking powder, salt and sugar and mix well. Set it aside. Break the egg into another bowl, beat it, and then add the milk and melted butter. Beat all together thoroughly. Make a well in the middle of the flour mix and add the mixed egg ingredients and mix. Ensure you start gently, and not too fast, as you don’t want it to be lumpy. Continue mixing until all the ingredients are combined and the mixture is smooth.

Set it aside and let it sit for a while, this is to let the baking powder rise. At least for about 5 minutes. While that is set aside, put your frying pan on the fire and add a tablespoon of oil. Heat it up for about 30 seconds on a low heat. Check your batter mix, use the scoop, to scoop the batter into the frying pan and leave it for about a minute or until the bottom is cooked and the sided are not runny. If your frying pan is large, you can actually scoop two pancakes at the same time.

Do the above continually, until all your pancakes are done. Now you need to work faster, as the cinnamon spread needs to be spread on a warm pancake not cold.

Put the butter into a bowl, melt it, and then add the brown sugar, mix it and let it blend, then add the cinnamon powder and mix. Please this should be done on a low heat, or else it will burn! Continue mixing as you don’t want it sticking to the pan or congeal. If the mixture is a little bit runny, add the flour, this will thicken it up. All done, remove the sauce from the fire.

Now to plate the yummy goodness 😊

Put the first pancake at the bottom, spoon the sauce and spread it with a knife. Then place another pancake on top. Spread the sauce again and finally cover it with the final pancake and spread it with the sauce.

It’s ready to serve. Now some people might prefer to still drizzle maple syrup on the pancake, that’s fine, but not necessary, as the pancake is already sweet from the spread and it may interfere with the taste.
