Hi guys, how are you all doing? This week has been a bumper for you guys. As promised I will post lovely recipes for you all to benefit from this special time of the year.
Molten cake is very delicious. Its so gooey and delecious. Just one spoonful and you are hooked. Lol so indulge carefully 🙂
The recipe is basic and most ingredients are readily available. So dont panic thinking I can’t make this. Yes you can! 🙂
Ok, lets get started shall we 🙂
- 3 Eggs (separated)
- Half a cup of butter (cut into cubes)
- 1 whole pack of dark chocolate
- 1/8 of salt
- 1 tablespoon of vanilla extract
- 1/3 of sugar plus 1 tablespoon of sugar
- 2 ramekins
- 2 mixing bowls
- Hand or stand mixer
- Wooden spoon
- Rubber Spatula
Prep time : 15 minutes
Cooking time : 15 minutes
Total time : 30 minutes
First of all, boil water in a pot, you will need this for later…
Next, Rub the ramekin bowls with butter (rub well so as to allow it come off when cooled after baking)
Next add half a tablespoon of sugar and slide it around the ramekins (do this repeatedly with both bowls)
Next break the eggs and separate the yolk from the egg whites.
In a separate bowl, pour in the egg yolks, and add the 1/3 cup of sugar. Whisk until it’s creamy. (3 minutes)
In another bowl, break the chocolate
Add the butter (cut into 8 cubes)
Place the bowl over simmering pot of water and let it melt. (Once it starts to melt, stir it) this will be for approximately 7 minutes.
Once completely melted, remove it from the heat and let it cool off.
Once cooled, add the chocolate to the egg yolk mixture and mix for 2 minutes.
In another bowl, add the egg whites, salt and whisk until light bubbles starts to form.
whilst whisking gradually add the tablespoon of sugar. Continue until it forms a soft peak. (See each step pictures below)

You will need a spatula for this next step
Now fold the egg white mixture into the chocolate in 2 stages.
1* to allow the egg whited incorporate into the chocolate mixture
2* so that the air in the egg whites does not completely evaporate.
Once the second batch has been added, mix for about 10 seconds and then stop.
Pour the batter into the ramekins and then pop it in the oven to bake for approximately 14 minutes. ( or else it will come out too solid)
Once it’s baked, remove it from the oven. You will notice that it has risen, Yes it’s meant to. Let it cool down for 30 seconds (It will deflate at the point, don’t worry, it’s fine) Whilst it’s cooling down, prepare your dessert plate.
Serve it immediately with homemade vanilla ice cream so that you can enjoy the gooey Ness inside (check my post on homemade vanilla ice cream) and strawberries. (See pictures below)
