Plantain Episodes: Part 1

Hello everyone. How are you all doing? Its great to be back with another post. Todays recipe has been on the back burner for a while. Reason being that I wanted to ensure I was very pleased with the base of the dish first.

As you all know I love plantain. As in loooove it. In any form. So in order to deconstruct it, I decided to make it this way. Trust me you will love it. Especially if you are staying off less complex carbs. And want to add more protein to your meal. This is one of the best ways. I am sure Adura O my superb Nutrition and fitness trainer will agree.

Ok, lets get started shall we 🙂

4 large Plantains
Minced meat
1 medium sized Onions
1 large Tatashe
2 Habenero peppers
Knorr cube
1 tablespoon of butter
Half a cup of beef stock
Tomato purée

1 medium sized pot
Baking dish

Prep time:
Cooking time
Total time:

Method :
Roughly chop the Habenero peppers and onions. Set that aside.


Next heat up one tablespoon of oil, add the chopped peppers and onions anf fry for 3 minutes.


Next add the crushed garlic, stir for a minute and then add the knorr cube. This will enhance the aroma of the frying contents.

Next add the minced beef.


Stir and keep stiring. Do not be tempted to add oil or water at this stage as it will secrete water whilst cooking. Cook on low heat for 7 minutes.


Next add the blended pepper, . Stir well and continue to cook on low heat for 25 minutes.

Pre heat your oven/grill now. 180 degrees

Whilst the sauce is getting ready, peel the plantain, cur into 3 and boil for 15 minutes. The plantain needs to be well cooked in order for you to be able to spead it on the sauce.



Once cooked, drain the water and add it to the bowl.


Add 1 tablespoon of butter


Use a masher to mash the plantain into a smooth paste. Set that aside


About 3 minutes to the sauce being almost ready, add the sliced peppers and peas. Cook and remove from the heat.



Pour the sauce into the baking dish.


Now, gently scoop the mashed plantain onto the sauce and spread with a spatula or wooden spoon.


Do this repeatedly until all the mashed plantain has been used up.

Place the pie in the oven/grill and bake for 25 minutes. Allow the top part to get brown. Thats where the beauty of the pie comes out.

Remove from the heat and let it cool down.
