Hi guys. How are you all doing today? Back with another Afro fusion recipe. I have been wanting to do do this recipe for a while, but I kept putting it off for one reason or the other. But today I said no, it must be done.
Ogi is well known in a Nigeria home as part of breakfast mostly on weekends. It’s always accompanied by moin moin or Akara. I used to love eating my ogi with peak milk. Oh so yummy especially the creaminess and texture and taste. Ahhhh 😀 good times.
Lol, before I forget to blog this, let me stop talking for now and show you all another amazing way to serve your ogi.
*to my non Nigerian followers ogi is made from ground corn that is allowed to ferment for a couple of days to give it that sour taste. It’s basically the English version of custard*
Ok let’s get started shall we
pre prepared ogi paste
1/4 cup of Sugar
1 tablespoon of Butter
1 cup of Milk
Prep time: 15 minutes
Cooking time: 8 minutes
Mix the ogi paste with a little bit of water. Ensure that the water isn’t too much or else the ogi will not solidify when hot water is added to it
Next boil water in preparation for making the ogi. Once boiled, her ready to add it the ogi
Gradually add the hot water to the ogi and stir until it gradually becomes solid.
Ensure that the ogi is cooked all through. (No white streaks. Once the hot water covers the ogi, it changes colour to an off white colour.
Mix well and set aside to cool down for a few minutes.
Pour water into a medium sized pot, add the sugar and begin to stir.
Once the sugar melts it begins to bubble. Make sure you stay there. If you leave it, it may burn
Keep stirring as it gradually changes colour
Once it’s golden in colour, add the butter and place it back on the gas. keep stirring until the butter melts
Once melted and mixed remove from the heat
Allow it to cool down for 30 seconds and then add the milk.
After two minutes, depending on how dark you want it to be, remove from the heat and let it cool down.
Your sauce is ready.
Serve as illustrated below.
Add the ogi into a bowl. Swivel it around with a spoon
Pour the caramel in the same swivel motion
Top it up with fruits
That’s it. Now you don’t have to serve it this way, feel free to explore your creative side
