Chicken Yassa

Hi guys, how are you all doing today? So this recipe isn’t that new. I have already posted one before, but that was done differently to this one. So i thought i’d try another version. I love the simplicity of this meal. It’s very easy to make and it’s so delicious. Its a recipe you will definitely want to try it. The recipe is courtesy of Gambia/Senegal. I salute you for this amazing dish.

Ok let’s get started shall we 🙂

2 whole Lemon (juiced)
7 tablespoons of Vinegar
1/2 teaspoon of Salt
1 tablespoon of chilli flakes
4 large white onions
1/2 a teaspoon of Black pepper
4 cloves of Garlic
Dijon Mustard
2 tablespoon of Olive oil or vegetable oil (needed only for the final part of the cooking)

chopping board
Grilling pan
Large Bowl

Prep time : 4 hours ( marinating time)
Cooking time : 40 minutes
Total time : 4 hours: 40 minutes

Method :

Slice the onions.

Mix all the ingredients together. Add the onions to the mixture.

Rinse the chicken and add it to the onion mixture. Marinade for 4 hours

AFTER 4 Hours:

Remove only the chicken from the marinade. Place it in a grilling pan and grill for 15 minutes.

After 15 minutes, remove the chicken from the grilling pan.

Heat up the olive oil.

Add the onions only and fry for 5 minutes.

After 5 minutes. Notice the onions has changed colour to a transparent look

Next add the marinade to the onions and cook on low heat for 20 minutes.

You will notice some of the onions becoming soft, that’s fine. It’s meant to be that way

Now add the grilled chicken and cook for 10 minutes.

Shake the pot gradually so that the sauce covers the chicken.

Remove from the heat.

It’s ready to be served.

Serve with rice. Yum!

I’ll see you all in my next post.

Love Duchess O
