Hi guys. How are you all doing. This recipe is another collection to my banana bread recipes. I love bananas. It gives me energy and also helps when craving sugar. It is naturally sweet. So I eagerly await the last few bananas in the bunch to getboverly ripe so that i can bake with it.
I also had fresh blueberries at home, so i thought why not bake with both of them. I have searvhed for recipes to use, but wasnt to pleased and i wanted a recipe that i was sure i can tweak and still get the same amazing results.
Laura Vitale is one person that i always trust her recipes. Even if you tweak it by adding something extra it still always comes out fine. So when I saw that she did it, I left the others and just went ahead with hers.
Ok lets get started shall we
- 2 cups of plain flour
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- 1 teaspoon of bicarbonate/baking soda
- 1/2 a teaspoon of orange zest
- 1 cup of blueberries
- 1/2 a teaspoon of vanilla extract
- 8 tablespoons of butter (must be at room temprature) (I used Flora light)
- 2 eggs
- 2/4 cup of milk (1/4 cup x2)
- 2 medium sized overripe banana
- Mixing bowl
- Stand or hand mixer
- Measuring cups
- Measuring spoons
- Baking loaf pan
Prep time: 10 minutes
Baking time: 1 hour
Total time: 1 hour : 10 minutes
Sift the flour, salt, baking powder and baking sofa into a bowl
Next, Mix the egg and sugar until creamy (1 minute : 30 seconds)
Next add the eggs and vanilla extract. Mix for 1 minute
Next add the mashed bananas and orange zest. (The smell at this time will be amazing) mix for 30 seconds
Next add about 1/4 cup of the flour to the washed blueberries and let it coat it. By doing this, it will stop the bluberries from sinking to the bottom.
Next add the remaing glour to the mixer and mix for less than a minute. Too much air will make the cake dense.
Next add the first 1/4 cup of milk and mix for 20 seconds (the reason is that you di t want to add all the milk andnlater find out its too wet. And watery. So 1/4 at a time please.
Next add the remaining milk and mix for 10 seconds.
Finally, ( you will need your spatula for this) add the coated bluberries. Laura used the mixer at first and then the spatula. I didnt want to pop the berried so i used thespatula straight away.
Fold until combined 7 seconds
Pour into the baking pan and bake for 1 hour.
The smell in the house was amazing. I had to stop my self from removing the bread immediately and start slicing.
Let if cool down before removing from the pan. (10 minutes) and then place it on a rack and let it cool down for another 15 to 20 minutes before slicing 🙂
