Homemade Chicken Suya Pizza!

Hi guys, how are you all doing? It’s been a while since I made pizza, so I thought I’d make some. Homemade is always good by the way, as you are sure of the ingredients and also the fat contents in it.

I initially wanted to make a general pizza, but then I thought, surely I can make Suya pizza using Suya spice.  I thought about it really had and made up a nice pizza combo that we can all enjoy anytime, without the worry of not having the ingredients. It’s readily available.

My pizza dough, is a mixture of various recipes. I have searched hard and wide for a perfect pizza dough, and I must admit, I was glad this one is a winner. I am really excited to share it with you all.
Ok let’s get started shall we 🙂

  • 3 and 1/2 cups of Flour
  • 1 and 1/3 cup of warm water
  • 2 tablespoons of Olive oil
  • 3/4 teaspoon of Salt
  • 1 tablespoon of Sugar
  • 2 and 1/4 teaspoon of Yeast 

Sauce Base

  • 2 large tomatoes 
  • Onions
  • Knorr cube 
  • 1/8 a cup of Oil


  • Sliced chicken
  • Ground Uziza seeds (optional)
  • 3 tablespoon of Suya spice
  • Mixed peppers 
  • 1 medium size Onions
  • 1 Knorr cube 
  • BBQ sauce (optional)

Prep time: 2 hours

Cooking time: 45 minutes(30 minutes to preheat the oven, 15 minutes to bake)

Total time: 2 hours: 45minutes

Before you begin. Please read my notes. It is very very important

1: Always proof your yeast. Don’t cut corners.

2: Start preparing your toppings 50 minutes before the dough is due to finish rising.

3: Pre heat your oven 30 minutes prior to baking.
Method: Dough
First of all proof the yeast: add the yeast to a large bowl, pour in the warm water and sugar. Whisk and allow to proof for 5 minutes.

Next sift the flour to get rid of lumps.


 After the yeast has proven (see picture)



Add the olive oil, salt and finally the flour. 

Add the flour gradually and mix until well incorporated.


 (Please excuse my nail polish)  
Remove from the bowl and knead for 7 minutes. Yes you must do this for the dough to come out nicely and fluffy after baking or else the bread part will be hard and up chewable.

After kneading, put the dough in a bowl that has already been lightly greased with olive oil. Roll the dough in it, so that at all of the dough is lightly covered in olive oil.


 Wrap cling film around the bowl and secure tightly. Put the bowl in a warm place to allow it to rise. Allow to rise for 1hour 30 minutes
1 hour: 25 before the dough rises prepare the sauce : 

Whilst the dough is rising, blend the tomatoes. Next, Pour the blended tomatoes  into a medium sized pot and cook until the water dries up. (20 minutes)
Next add the oil. The reason I didn’t add the oil before is because I wanted the sauce to cook and gather its own taste, before the addition of oil. The sauce for pizza is very distinct and I wanted to do that with our own sauce.
Allow to fry, I used a little oil, as the sauce doesn’t need a lot of oil, it’s just for the taste and texture. (10 minutes)
Finally add the tomato purée, mix well and cook until both has been well incorporated. (5 minutes)
Set aside.
50 minutes before the dough rises 

First of all preheat your oven to 250 degrees for 30 minutes. (Please this is very important)

Mix all the Suya, and the spices together, and knorr cube. (Careful, you may sneeze at some point here. 
Slice the chicken. And then season well with the Suya mix


Heat up one tablespoon of oil, 

Next add the sliced onions 

Next add the chicken and seal until both sides has been cooked. Cook for 10 minutes. Make sure you stir most of the time 


After 8 minutes, add the peppers. 

Allow it cook for only 2 minutes. remove from the heat and set aside.

 Back to the dough


 Divide the dough into two. brush the other one lightly in olive oil, put it in a plastic bag (nylon bag) and freeze. 

It will keep for 3 months.
Put the other one back in a bowl and cover for another 15 minutes. This is important. Please do not skip.
In the meantime, put baking paper on the tray you intend to use to bake the pizza. This is so that the pizza will not stick to the bottom of the tray.
After 15 minutes. Remove from the bowl, place it in the tray and start spreading until you get a round shape. See pictures.


Make sure you lift the edges in order to secure the toppings.

Add the sauce. Spread it around evenly and generously.

Next add the Suya seasobed chicken


Finally add the smoked BBQ sauce


Check that your oven has been heating up for 30 minutes, if not wait until it hits 30 minutes mark.
Place it in the oven and bake for 15 minutes.
All done!

Now enjoy your Pizza. Yum yum yum!
