Betacarotene Stew (Carrot Stew)

Hi everyone. So this Tomato issue is really getting serious. It’s becoming a cause for concern and most people are wondering how to eat red stew without the sweetness of tomatoes balance it. Well, let me tell you one thing, you may not need tomatoes….. You will however need one Vegatable…. Carrot! 

Yes you read right, Carrots. There are lots of benefits of carrots. It contains Betacarotene ::: Beta-carotene’s chemical formula – C40H56 – was discovered in 1907.The human body converts beta-carotene into vitamin A (retinol) – beta-carotene is a precursor of vitamin A. We need vitamin A for healthy skin and mucus membranes, our immune system, and good eye health and vision.

Beta-carotene in itself is not an essential nutrient, but vitamin A is. (Source: medicalnewstoday.com)

However, One of the most important is the vitamin that it gives, which is Vitamin A. This vitamin is very very important in our diet. Let

 Antioxidants like Vitamin A are also responsible for building strong bones, regulating gene regulation, maintaining healthy clear skin, facilitating cell differentiation, and supporting immune function. 

Vitamin A is found in two primary forms: active Vitamin A and beta carotene

Beta carotene, a type of carotenoid which is found primarily in plants, needs to first be converted to active Vitamin A in order to be utilized by the body.Nutrition experts and physicians recommend obtaining antioxidants like Vitamin A primarily by eating a well-balanced diet high in fruits, vegetables, and whole foods whenever possible, rather than from supplements

Ok, now that we have that all covered, let’s get started shall we 


  • 3 large carrots 
  • 2 large tatashe 
  • 2 long red peppers 
  • 2-3 yellow atarodo (based on your preference)
  • 1 large onions
  • Ginger 
  • Garlic
  • Goat meat
  • Salt
  • Knorr cube 


  • 2 medium sized pots
  • Baking tray
  • Wooden spoon 

Prep time: 20 minutes 

Cooking time : 45 minutes (if your meat is already pre cooked)

Total time: 1 hour-1hour:5minutes

Method: you need to do step one and two simultaneously

Step 1: if you have already booked your meat, just add it to the baking Tray and grill for 25 minutes

But if you haven’t, boil your goat meat with ground onions, ginger, garlic and salt. Once boiled, just go to step 1. 

Step 2: Slice the peppers and half of the onions. Place it on a baking tray and grill for 20 minutes.

Whilst a Th pepper is grilling, heat up 1 tablespoon of oil.add half of the remaining onions (sliced) and also the sliced carrots. Sauté on low heat for 8 minutes. 

After 8 minutes add the grated garlic and ginger. Continue to sauté for another minute. Once done, set aside 

At the 20 minutes mark, remove the pepper from the grill. (It should look like the picture below)

Allow it to cool down for a few minutes.

Next add it to the blender with the sautéed carrots and half of the meat stock and cleans to a smooth paste. 

Once blended. Heat up the remaining oil, once hot, add the blended pepper. Allow it to fry on very low heat for 10 minutes

After 10 minutes, add the grilled goat meat. Allow to fry/slow cook for another 10 minutes.

After 10 minutes, add the knorr cube.

Finally, you will see the oil seperate. 

Once you achieve this, remove from the  heat and set aside. It’s ready to be served. Smells amazing doesn’t  it? The grilled goat make the stew smell divine.
